Pancakes Baby

It's Paaaaaaaancaaaaaaake Day!

Those that know me, know that Pancake Day is one of my favourite days of the year. It's a personal tradition of mine to always make pancakes on this day, as you usually do.

Well here's a different spin on the traditional pancake.

Recipe for 12 pancakes:
Ingredients
150g plain flower (1 cup of all purpose flour)1 tablespoon of cocoa powder  (not drinking chocolate)
1/2 teaspoon baking powder1/2 bicarb (baking soda)3 tablespoons sugarPinch of salt250ml cup of buttermilk or runny plain yogurt (1 cup)1 large egg1 tablespoon of vegetable oil1 teaspoon of vanilla and red food colouring
What you need
1 large bowl, 1 measuring jug, 1 metal skewer and 1 griddle or non-stick frying pan (skillet)
In a large bowl, mix together 150g plain flour, 1 tablespoon cocoa powder, half a teaspoon each of baking powder and bicarb (baking soda), 3 tablespoons sugar and a pinch of salt.
In a measuring jug, whisk together 250ml (1 cup) buttermilk or runny plain yogurt, 1 large egg, 1 tablespoon vegetable oil, 1 teaspoon vanilla and red food colouring. Add a small blob or 1 teaspoon with a metal skewer.
Whisk the liquid ingredients into the dry ingredients and set to one side while you get out a smooth griddle or non-stick frying pan (skillet) and warm it on the stove, wiping it with a little vegetable oil first. Add small ladlefuls of the batter onto the griddle and when bubbles start appearing on the surface, after a minute or two, it means the pancakes are ready to turn. They’ll probably need just under a minute on the second side, but it depends on how hot the griddle is, so check as you go.
